Cooking Instructions

Dice and cook the onions in olive oil until soft.

Chop the carrots, parsnips and peppers into equal sized cubes and cook until soft.

fill the pot with boiling water 1 inch above the top of the veg.

Add both the stock pots, the chilli flakes and season with salt and black pepper to taste.

Leave to boil on a medium heat for 20 minutes before blending with a hand blender until smooth, then leave to simmer for approximately 1-2 hours or until at desired thickness.

Serve and enjoy.

I love stuffed peppers, my kids not so much lol. One day I was in a cafe where they serve a stuffed pepper soup it was amazing so I thought why can't I make this at home. I decided to take all of the components of my stuff peppers and turn it into a soup. This was so tasty and delicious my kids absolutely love it and they won't eat stuffed peppers by themselves but they will eat all of the soup. I don't have to season it too much because sweet Italian sausage has so much flavor but in a nutshell however you make your stuffed peppers season it the same way in the soup.stacy
