Stuffed Pepper Soup

Ingredients

  1. 1 lbItalian sausage, casting removed
  2. 1 mediumonion, chopped
  3. 3 largebell peppers, chopped
  4. 1pablano pepper, chopped
  5. 3garlic cloves, chopped
  6. 2 canfire roasted tomatoes
  7. 3 cantomato sauce
  8. 3 1/2 cupchicken broth
  9. 3 cupbrown rice
  10. 3 tspworcestershire sauce

Cooking Instructions

    In large dutch oven brown sausage on high heat.

    Drain fat, then add onions, garlic, and peppers.

  3. 3

    Reduce heat to medium-low and cook for 5 minutes.

  4. 4

    Add tomatoes, sauce, worcestershire, 2 cups of the chicken broth, and season with salt and pepper.

    Cover and simmer on low heat for 30 minutes.

  6. 6

    In separate pot cook rice with remaining chicken stock according to directions.

  7. 7

    Add rice to soup and serve.
