Ingredients

  1. 1 lbground beef
  2. 1 largeonion, chopped
  3. 1 cupuncooked or 2 cups cooked rice
  4. 2 can15 oz diced or sliced tomatoes
  5. 1 can15 oz tomato sauce
  6. 2 cupchicken broth or stock
  7. 2 1/2 cupwater
  8. 3 largepeppers (green, red , yellow ect) cut into bite size chunks
  9. 1 tsporegano or italian spice (dry)
  10. 1 tspbasil
  11. salt & pepprr
  12. shredded cheddar cheese (opt)

Cooking Instructions

    Brown ground beef & onions in a large 5qt. pot. Drain off excess grease.

    Add rice, tomatoes, tomato sauce, spices, broth & water.

  3. 3

    Bring to a boil & reduce heat & cover 20 minutes if using precooked rice. If using uncooked rice, rice should be timed according to package directions for rice cooking times. Cooking times for rice varies. Add a bit more liquid (water or broth) if it isn't soupy enough.

    When rice is cooked add peppers & simmer for 20 minutes longer salt & pepper to taste.

    Serve hot with shredded cheddar cheese on top. Enjoy!

I enjoy watching cooking shows & I am most creative after watching several chopped episodes! I live in a country town & it's a ways to a good grocery store so I have to be creative with what I have available or go 25 miles to Kroger! My hubby & son are big eaters & very different at that. I try to please both with a little country cooking but also changing it up sometimes with different cuisines! My love of cooking was nurtured by my Dad who coaxed me into tasting all kinds of different foods growing up. Both my sons love trying new recipes. My youngest son is now taking Culinary in Vocational school! Guess it runs in the family!
