Stuffed Pepper Soup

I love stuffed peppers, my kids not so much lol. One day I was in a cafe where they serve a stuffed pepper soup it was amazing so I thought why can't I make this at home. I decided to take all of the components of my stuff peppers and turn it into a soup. This was so tasty and delicious my kids absolutely love it and they won't eat stuffed peppers by themselves but they will eat all of the soup. I don't have to season it too much because sweet Italian sausage has so much flavor but in a nutshell however you make your stuffed peppers season it the same way in the soup.

Ingredients

  1. 1 lbsweet Italian sausage or meat of your liking
  2. 1onion diced
  3. 3whole peppers of your liking
  4. 2 boxsometimes 3 of chicken broth or stock
  5. 1 largeCan crushed tomatoes
  6. 1/2 cuprice sometimes 1 cup depending how thick you want it
  7. grated parmesan cheese

Cooking Instructions

    Preheat oven to 350. Clean and half your peppers, roast then until tender about 15 to 20 min.

    Cook your meat on the stove top in a pot. Add onion to meat while cooking. drain meat leaving a little bit of the liquid for flavor.

    Add chicken broth and bring to a slight boil, then turn down to simmer.

    Cook your rice according to the package then add to the pot as much or little as you want the more you add the thicker it will become more like a stew than a soup.

    Pour the whole can of crushed tomatoes in the soup and stir everything together.

    Take peppers out of oven and cut up or dive up and add to the pot.

    Tho it off with parmesan cheese and serve.

    Use salt and pepper as desired
