preheat oven to 350.

Season pork with salt and pepper then brown in olive oil for about 10 minutes. Remove to baking dish and place in oven to finish cooking, about 15 minutes.

Peel and core the apple. Dice into small pieces about 1/4in. Melt butter in skillet used to brown pork. Add brown sugar and apples.

Add applejack, sage and celery salt to apples and cook til apples are slightly soft. Leave over low heat til pork is done.

Remove pork from oven and place on platter. Add any juice in the baking pan to the apples.

Add the cream to the apples and stir until warmed. Pour over pork . Serve with Pasta.
