I call this Mountain French Toast. The first time I had it was up in the mountains of NC, many years ago. Liked it so much I asked the cook for the special ingredient he used.

Ingredients

30 mins
  1. 2eggs
  2. 1 tspvanilla extract
  3. 1/2 tspcinnamon
  4. 1/3 cupmilk
  5. 4stale or day old bread - any kind
  6. dashsalt
  7. 1/2 tspnutmeg
  8. 2 tbspwhite granulated sugar
  9. Butter for browning or cooking spray

    In a flat bottom dish (I use a pie plate - holds 2 slices bread), beat the eggs with the milk. Add remaining ingredients until well blended.

    Dip the bread in the egg/milk mix. Make sure both sides are well coated. Don't soak too long, though.

    Lightly grease a griddle or fry pan with either spray or butter. About medium high is good. Brown the bread for about 2 mins then turn and brown the other side. Don't cook too fast, as the outside will brown and you will have uncooked "custard" on the inside. Your toast will also fall apart.

    When toast is done, you can add fruit toppings, sprinkle with powdered sugar or serve with butter and maple syrup. I like the taste of vanilla, you can always increase or decrease as well as the cinnamon and nutmeg. These freeze well. Double the recipe and when they are cool wrap them up and freeze for another meal. Just heat them in the toaster or toaster oven.

Am an Army Vet who served as a cook for 8 years. Went to the Persian Gulf and spent 2 years in Seoul Korea. Have been a widow for 3 yrs, so don't really get to cook as much as I would like to. Now about the only time I get to "shine" in the kitchen, is when we have something at the local VFW Post. As you can see, I have 2 boys who keep me company and take up much of time.
