A really simple and tasty soup that I love eating as is, as well as using it as a base to make other dishes. For example, its great for making southwest rice.Me and my family go through it very quickly so I make triple the amount in this recipe and it never goes to waste. The shallot is optional, and feel free to add more or less basil depending on your tastes.
