I usually double this recipe, making 1 loaf and 1 batch of muffins. The recipe is very versatile. You can add more banana if you'd like to increase the banana flavor. I have also made it with add-ins (choc. chips, dried cranberries, chopped walnuts). Stir in after flour.

Ingredients

  1. 3ripe bananas
  2. 1/3 cupmelted butter or margarine
  3. 3/4 cupsugar (half brown sugar, if desired)
  4. 1eggs, beaten
  5. 1 tspvanilla
  6. 1 tspbaking soda
  7. 1 pinchsalt
  8. 1 1/2 cupflour

    Preheat oven to 350°F

    Mash ripe bananas in a bowl

    Mix melted butter into bananas

  4. 4

    Add in sugar, eggs and vanilla. Mix well.

    Sprinkle baking soda and salt over mixture. Stir thoroughly.

    Add flour. Stir until just moistened.

  7. 7

    Butter (or use cooking spray) loaf pan.

    Pour mixture into prepared loaf pan. Bake for 1 hour at 350°F. Bread is done when a toothpick or table knife inserted into center comes out clean

    If using prepared muffin pan, bake at 350°F for approx. 25 min.

    Cool in pans on cooling rack for 10 - 15 minutes. Loosen bread from sides with a knife, then remove from pan. Finish cooling on the rack. My family enjoys this sliced and served plain or with honey butter.
