Very easy & inexpensive. Quick to prepare, will serve up to 6+ dependent on portion size for meal. I have ¼ batch over 4 days with a homemade mini burger bun made from my favourites. You can use coconut milk instead of single cream or any other you like but this will effect the calories & nutrition.

Ingredients

  1. For the soup
  2. 800 mlcold water
  3. 1000 gramscelery washed & cut small
  4. 100 gramscarrot peeled & diced
  5. 100 gramsred onion chopped
  6. 1veg cube i used knorr
  7. 1bit chilli powder
  8. 1bit ground cumin
  9. 1bit white pepper
  10. 1bit garlic granules
  11. 75 gramsalpro single cream
  12. Whole Batch....NUTRITION
  13. 16Total Fat
  14. 2Sat fat
  15. 640Sodium
  16. 6Potassium
  17. 32Carbs
  18. 17Fibre
  19. 23sugar
  20. 11Protein
  21. 260Vitamin A
  22. 2Vitamin C
  23. 2Calcium
  24. 6Iron

Cooking Instructions

  1. 1

    Add all veg to a pan or slow cooker. I used an 8 in 1 on 140°

  2. 2

    Pour on water, then add the spices & stock cube then stir. See pic for amount of each spice.

    Stir in, pop lid on & cook until veg are soft. Mine took 45 minutes.

    When cooked, let cool for 5+ minutes then blend with a stick blender.

    Add cream & blend in.

  6. 6

    Divide in bowls, serve or cool & lid. Then keep in the fridge up to 4 days...
