Cream of Celery Soup 2,150ml 300 cals serves 4-6

Very easy & inexpensive. Quick to prepare, will serve up to 6+ dependent on portion size for meal. I have ¼ batch over 4 days with a homemade mini burger bun made from my favourites. You can use coconut milk instead of single cream or any other you like but this will effect the calories & nutrition.
Cooking Instructions

Add all veg to a pan or slow cooker. I used an 8 in 1 on 140°

Pour on water, then add the spices & stock cube then stir. See pic for amount of each spice.

Stir in, pop lid on & cook until veg are soft. Mine took 45 minutes.

When cooked, let cool for 5+ minutes then blend with a stick blender.

Add cream & blend in.

Divide in bowls, serve or cool & lid. Then keep in the fridge up to 4 days...

Just been away & tried butternut squash but it wasn't a soup it was puree, bit bland but ok. Always up for making new soups so tried this, own recipe & its lovely. A tad on sweet side though so can change sweet potatoes for normal & it should still be nice. Irmgard Gater -

Bought 2 large cauliflowers as usually you throw away half but these were very fresh so I used most of the 2 saving some for Saturday & Sundays roast dinner. Made cauliflower soup before but in soup maker & wasn't as thick n creamy..you can spice this up as much or as little as you like. I'm not keen on spices so this is just right for me. I used three of those - celery, carrot and mitsuba - to make the celery soup that we've been enjoying in our house for about 15 years.Use 1 large or 2 small soup stock cubes.Don't cook the soup for too long after adding the celery, in order to fully enjoy its flavor.You could use the celery leaves instead of the mitsuba.
