Ingredients

  1. 1 headcauliflower
  2. 2 tbspolive oil
  3. 2 tspgarlic powder
  4. salt
  5. pepper
  6. lemon juice (optional)

    Preheat oven to 390°F and line a baking sheet with parchment paper or aluminum foil.

    In a bowl or zip lock bag, combine olive oil, garlic, salt and pepper.

    Remove all the leaves from the cauliflower and cut into small florets.

  4. 4

    Toss the cauliflower with your oil and spices mixture until well coated (this step is why I like to use a bag).

    Lay coated cauliflower on prepared baking sheet and roast in the oven (center of oven, preferably).

    Roasting time will depend on floret size, but you want them to be fork tender. Probably 20-30 minutes, flipping the cauliflower halfway through. (If using purple cauliflower, 16 minutes is better).

    Splash with lemon juice before serving if desired.
