A easy to make, good side dish. Not low fat, but so good. The broth/water helps keep the corn moist, and slightly steams it. The corn takes on a different texture, and adds a nice touch. Give this recipe a try, and experience something new.

Ingredients

25 minutes
4 sides
  1. 1/4-1/2 poundpork belly (or bacon)
  2. 16 oz.Package frozen corn
  3. 1/2medium onion
  4. 1/2Bell pepper optional
  5. 2garlic cloves
  6. 1/4-1/2 tsp.Crushed red pepper optional
  7. 1/2 tsp.Cumin
  8. 1salt to taste
  9. 1black pepper to taste
  10. 2Tbl. Broth or water

Cooking Instructions

    Cut meat into bite size pieces, I'm using pork belly here

  2. 2

    Spray a skillet with oil, heat on medium or a touch above. When hot add meat.

    Chop onion, garlic and Bell pepper.

  4. 4

    Stir occasionally until meat has given up some of its fat, and at least started to crisp a little.

    I'm using corn in a cook in bag, so I microwaved it for 2 minutes to thaw.

    Do not drain fat off. Add onions/peppers to skillet, stir often

  7. 7

    When onions just turn translucent, add corn, chopped garlic and cumin.

    Add a pinch or two of salt, few grinds of black pepper and broth/water stir to combine.

    Turn heat down to medium-low, cover.

  10. 10

    Cook covered for 15 minutes, but stir every 5 minutes.

    Uncover, check seasoning levels. Season, stir as required.

    Place in serving bowl. It's now ready.

    You can garnish with cilantro or flat parsley, even green onions.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
