Made an early Dinner today I love this dish another Spanish Influenced dish. What I love about this is the tenderness of the meat and the crunchiness of the vegetables and the heartiness of the potatoes and let’s not forget the sweetness that comes from the plantains and the tomato sauce broth that meets steamy hot rice or serve it with mashed potatoes you’ll truly enjoy this stew.

Ingredients

  1. 1 lb.Pork belly chopped
  2. 2med tomatoes chopped
  3. 1 tsp.Garlic minced
  4. 2 TbspsParis or fish sauce
  5. 1 tbsppeppercorns
  6. 1 cantomato sauce
  7. 2large plantains
  8. 1small cabbage quartered
  9. 1/4 lblong green beans
  10. 2potatoes cubed
  11. 1 cupwater
  12. 2 tbspoil
  13. Optional chick peas

Cooking Instructions

  1. 1

    Heat oil in cooking pot

  2. 2

    Sauté garlic, onions and tomatoes.

  3. 3

    Add pork and cook until color turns brown.

  4. 4

    Add fish sauce, peppercorns and tomato sauce

  5. 5

    Add water and let boil simmer for 30 to 40 min until Pork is tender

  6. 6

    Add potato, plantains cook 5 min

  7. 7

    Transfer to plate and serve
