Cooking Instructions

Preheat oven to 180degrees c

Line your cupcake trays with cupcake liners and measure out your ingredients accurately.

Sift the flour and baking powder and keep aside. Combine margarine and sugar until pale and soft. Add the essence.

Add the eggs, one at a time,thoroughly beating after each addition until the egg is fully incorporated before adding another.

Fold in the dry ingredients starting with half the flour, then half the milk, then the rest of the flour bit by bit until you reach a smooth drop consistency.

Scoop the batter into the cupcake trays, make sure you fill upto ¾ to leave room for the cupcakes to rise.

Place on the middle rack of your oven to bake. Bake for 25-30mins until well risen and golden brown.

Remove from the oven and remove from the tray immediately, place on a cooling rack.
