Ingredients

  1. 1/2 cupchopped onion
  2. 6 cupswater
  3. 3/4 cupfresh lime juice, divided
  4. 1 poundmedium shrimp
  5. 1 cupchopped peeled cucumber
  6. 1/2 cupketchup
  7. 1/3 cupchopped fresh cilantro
  8. 2 TbspMexican hot sauce (such as Tamazula)
  9. 1 Tbspolive oil
  10. 1/4 tspsalt
  11. 1Avocado

Cooking Instructions

    Place chopped onion in a colander, and rinse with cold water. Drain

  2. 2

    Bring 6 cups water and 1/2 cup juice to a boil in a Dutch oven. Add shrimp; cook 3 minutes or until done. Drain and rinse with cold water; peel shrimp.

    Combine shrimp and 1/2 cup juice in a large bowl; cover and chill 1 hour. Stir in onion, cucumber, and remaining ingredients.

    Dice avocado into squares using the skin as a cup to dice

  5. 5

    Add diced Avocado and Serve immediately or chilled.

This isn't ceviche. It sounds more like a shrimp cocktail. Ceviche is actually when the shirmp or fish is cooked by soakimg in the lime juice
