Ingredients

4 servings
  1. 1/2 tspthyme, dried
  2. 1/2 tspsage, rubbed
  3. 1/4 tspsalt
  4. 1/4 tsppepper
  5. 1 lblean pork tenderloin
  6. 1 tbspbutter, light
  7. 1/4 cuponion, chopped
  8. 1/2 cupcarrot, thinly sliced (or pre-shredded if you are short on time)
  9. 1/2 cupbroth (1/2 tsp bouillon dissolved in 1/2 cup water)
  10. 1 1/2 cupsherb-seasoned stuffing mix

Cooking Instructions

    Combine thyme, sage, salt and pepper.

    Cut tenderloin into medallions, sprinkle with spice mixture.

  3. 3

    Heat butter in skillet, add medallions, cook until juices run clear. Transfer to serving platter, keep warm.

    In the pork juices, saute onions and carrots until tender.

  5. 5

    Add broth and stuffing, heat thoroughly. Spoon over medallions.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more.
