This cake MUST cool completely before being sliced. If you slice it into the cake before it's cooled, it will be too gooey in the middle. The cake sets as it cools.

Cooking Instructions

Melt chocolate and butter together. Separate 4 of the 6 eggs, placing egg whites and yolk in separated bowls.

In the bowl with yolks add vanilla, cocoa powder, salt, remaning eggs (whole) and half of the sugar. Whisk well to combine. Slowly add the cooled chocolate mixture to the yolk mixture.

Using an electric mixer set to medium-high speed, beat eggs white until fluffy. Gradually beat the remaning cup of sugar and beat until peaks form.

Carefully fold the egg whites in the chocolate mixture until incorporated. Pour the batter into the pan and smooth with a spatula.

Pre-heat oven to 350 degrees F or 175°C for about 30 to 40 minutes. Bake until the top is slightly cracked.

Sprinkle cocoa powder or sugar on top to decorate.
