Sage Pork Chops with Preserve Sauce

This is one of the easiest and most satisfying recipes I've ever made. Don't be shy with the sage; it makes the dish. The kind of fruit preserves is entirely up to you. I've used just about every kind/combination there is and they all fit into the recipe (fig and/or apricot are my favorite)

Ingredients

  1. 3 1/2 inchpork chops
  2. 3 tbsprubbed sage
  3. 3 tbspmixed Italian herbs
  4. 2 tbsporange juice
  5. 2 tbspapple cider vinegar
  6. 1/4 cfruit preserves
  7. 1 tbspolive oil
  8. 1 tbspunsalted butter
  9. to tastesalt and pepper

Cooking Instructions

    Season chops with salt, pepper, sage, and mixed herbs

  2. 2

    Heat oil and butter in a large nonstick skillet over medium to medium-high heat

  3. 3

    Sautee chops 4-5 minutes on each side until golden brown. Remove from pan and loosely cover with foil to keep warm

  4. 4

    Add vinegar, orange juice, and preserves to pan and reduce for 1-2 minutes

  5. 5

    Serve sauce either underneath chops or on the side
