Ingredients

4 servings
  1. 750 gpork chopped into cubes
  2. 6 clovesgarlic
  3. 1parsnip
  4. 2carrots
  5. 1large onion
  6. 4medium mushrooms
  7. 1lump of fresh ginger chopped finely
  8. 40 mlolive oil
  9. 8small whole salad potatoes add more to stretch this meal
  10. Beef stock pot
  11. 1 tspcayenne pepper
  12. 1 tbsground coriander
  13. 1 tbscumin seeds
  14. 1 tbsground turmeric
  15. A few bits of cinnamon bark
  16. 230 gpre cooked cannellini beans
  17. 230 gpre cooked red kidney beans
  18. 500 gpassata
  19. 1 tbstomato puree
  20. 1 tspblack pepper
  21. 1 tspsalt
  22. 250 mlwhite wine
  23. 3-4 stalkscelery

Cooking Instructions

    Sweat the thinly sliced onions, the celery, garlic, ginger and spices gently in the olive oil in a large pot.

    Meanwhile sear the pork in a very hot heavy bottomed frying pan or dutch oven in batches and add to the onion and spice mixture as they brown on all sides.
    (Don't skip this step as it makes a huge difference to the flavour)

    Chop up the vegetables and add to the pot.

    Add the passata, beans and white wine and all the other ingredients.

    Simmer on a very low heat stirring occasionaly and top up with water from time to time if it seems to be drying out. Cook for an hour.

    Serve with soured cream and freshly chopped coriander leaves.
