Ingredients

  1. 2red bell peppers 2 large tomatoes 1 hot pepper 1.onion
  2. 2garlic cloves
  3. 3 tablespoonsveg oil
  4. 2 tablespoonsbutter
  5. Halfmedium onion thinly sliced
  6. 2bay leaves
  7. 1 teaspooncurry
  8. Thyme
  9. White pepper
  10. 2maggi cubes
  11. to tasteSalt
  12. 700 gspaghetti

Cooking Instructions

    Chop and blend all sauce ingredients in a food processor until chunky. Place a large pan on medium heat. Heat up cooking oil. Add in sliced onions and stir-fry until fragrant and translucent, add in spices and bay leaves.

    Stir.add in stew base and allow to simmer covered for 3-5 minutes add Maggi and salt. Taste and adjust for seasoning. Add butter and continue to simmer on medium-low heat.

    While sauce is simmering soak your smoked fish with hot water and set aside, boil lots of water in a large pot add salt add pasta as soon as pasta is wilted about 4-5minutes take out 2 cups of pasta water and add into the simmering sauce.

    Drain the pasta of all left over liquid and add warm pasta into sauce, wash your soaked smoked fish add in pasta and sauce, stir to incorporate sauce and pasta. Cover and leave to simmer for 10minutes. Enjoy! Intagram@Ayyush_hadejia
