I love soups. When making anything, I try to use as much fresh as possible. Especially Vegetables. Vegetable soup is one of my favorites. I would love to be able to always have it made so I could grab a soup mug or bowl full whenever I like. I always make 5-7 quarts of soup. I keep some out, place some in sandwich Ziplock baggies. This baggy makes one full bowl of soup.

This is a soup I made for a friend who has a dairy allergy. In order to get a rich flavor and thickness I tried roasting as well as other tricks with the ingredients.Change the vegetable ratios and the spices as desired. So many different recipes for Chicken soup, I find it so difficult to choose which one is or could be my favorite.This soup is so different from the others because I have tweaked it slightly so by adding bay leaf, and I have not added any vegetables because I wanted the taste from the bay leaf to stand out from the rest of the ingredients.
