Peel and dice potatoes to desired shapes. I usually just dice them into small cubes or as per usual chip slices

Sprinkle some salt and fry until browned.

Do the same for the plantains, cube and fry with salt to taste.

Now in a pan add some little oil. Fry the slices of onions and some scotch bonnets with garlic. After a minute add the carrots and green peppers too. Season and spice it up to desired taste

Now add your fried potatoes and plantains. Note that plantain is completely optional here. You can use fried eggs, or beef or just the potatoes too.

Stir fry until it's completely merged up I.e about 3 minutes.

Serve as a main dish or as a side dish. I served mine with Noodles
