Shimeji mushrooms, shiitake mushrooms, and bamboo shoots is good. Chop into pieces so that they cook through.If you simmer yakisoba noodles for too long, they get soggy. You can use any kind of noodles you like here, it doesn't have to be instant noodles - good gluten-free choices are dried pastas such as spaghetti or fusilli. Rice noodles I feel aren't so tasty in this dish and are better suited to soup. Dry pastas in general usually don't contain egg so are a good vegan choice.
