Okpa with pap

My Moms favorite breakfast while I was growing up... And She always packed okpa flour for me way back as an undergraduate then. Heavy breakfast since 1900😃 once I finish this one I go to bed 🛏 straight. Next sleep 😴 session loading🤷‍♀️
PS: Don’t talk while mixing okpa otherwise you mess up the meal 👌😁

Ingredients

  1. Medium size bowl of processed and sieved okpa flour
  2. 1/2 bottleRed oil
  3. Big Onion and red bell pepper to taste (washed and pounded)
  4. to tasteSalt
  5. Moi moi plates or nylon
  6. Fresh raw pap

Cooking Instructions

  1. 1

    Boil water 3 liters of water in a kettle

  2. 2

    In a clean dry bowl pour sieved Okpa flour and add red oil

  3. 3

    Blend the mixture evely with enough oil

  4. 4

    Now gradually add boiled water to the mixture to make a paste and stir rigorously

  5. 5

    Continue adding the boiled water little by little and stir continuously with spatula or hand mixer until it bubbles

  6. 6

    Be careful not to add excess water. Now add pounded onion, pepper and salt into the mixture

  7. 7

    Stir very well and taste for salt

  8. 8

    Pour the remaining boiled water inside pot and put on the heat

  9. 9

    Scoop the okpa small small inside nylon and tie

  10. 10

    Put inside the boiling water and cover to cook in high heat for 40-45mins

  11. 11

    Check your okpa at intervals to be sure there is enough water inside the cooking pot until its done ✅

    Mix pap with little water to make a light paste👇🏼

  13. 13

    Pour boiled water inside the raw pap until it forms

  14. 14

    Serve with okpa and enjoy. 😊
