Sweet potatoes pepper soup with Isiewu (Goat head)

Cooking Instructions

Wash, peel, and cut potatoes into small chunks and set aside

Cut goat head. Wash very well and cook with onion, seasoning cubes, pepper, salt. Add Stockfish and Allow to cook until its tender.

Pour pounded peppers, crayfish, okpey, pepper soup spices inside the pot and add more water and stir very well

Add a drop of palm oil and pour the potatoes 🥔 inside the pot

Pour spring onion, carrot and stir, check for salt and balance ingredients. Add a little thickener. Cover to cook. Check at intervals so you don’t over cook the potatoes

Add spinach, stir and serve immediately.

I ate a sweet potato soup for lunch at a cafe and thought it was so good that I wanted to try and replicate it at home. The soup I ate tasted of seasoning and dairy products but I wanted to try making it "Ruruko"-style and made it non-dairy.I used potatoes that were a bit old so they didn't have a very high water content.
