Peel,slice n wash potatoes.wash the plantain n slice n add salt to taste

In a saucepan add veg. Oil n fry both Irish n plantain on a medium heat until well cook,.set aside Break eggs, whisk, add little butter on ur saucepan,pour in your eggs, add ur green n red peppers,salt to taste on slow heat,add ur spring onions allow to fry. Then use ur spatular to turn n make it look scrambled
