Ingredients

  1. 4 cchopped Root Veggies (sweet potato, carrots, beets, parsnips, etc)
  2. 1small Onion
  3. 2 tbsphigh heat Oil
  4. 1 lbground Turkey or Chicken
  5. Puree
  6. 4 cSpinach
  7. 1/4 cDill
  8. 1Garlic Clove
  9. Juice and zest of 1 Lemon
  10. 1/2 cEVOO
  11. PinchSalt

Cooking Instructions

  1. 1

    Preheat oven to 400 degrees. Toss root veg and onion with oil and season with salt & pepper. Roast veg for 20-30 minutes, stirring once, until slightly caramelized.

    Make puree, add all ingredients to a high speed blender and puree. A slightly chunky texture is preferred

    Just before the roasting is complete, add ground turkey to a saute pan and cook through, about 5 minutes. Toss sausage with root veg

  4. 4

    To serve, portion hash onto 4 plates and drizzle with puree.
