Ingredients

  1. 1.1 poundsbeef
  2. 8 1/2 cupswater for boiling beef
  3. 2green onions, thinly sliced
  4. 2 stalkscelery, thinly sliced
  5. 1 stalklemongrass, bruised
  6. 3/4 inchginger, peeled and bruised
  7. 1 tablespoonmedium-sweet soy sauce
  8. 1/2 teaspoonvinegar (optional)
  9. 2radishes, peeled and chopped (see tips)
  10. 2 tablespoonsvegetable oil, for sautéing the spice paste
  11. Spice paste:
  12. 3 clovesgarlic
  13. 5shallots
  14. 1/2 teaspoonwhole peppercorns
  15. 1 teaspoonsalt
  16. To serve:
  17. 3.5 ouncesfried soybeans/peanuts
  18. 0.9 ouncesfried shallots
  19. 3key limes
  20. chili sauce to taste
  21. crackers
  22. 6servings of white rice (as desired)

Cooking Instructions

    Boil water in a pot, add the beef, and cook until tender. Remove the beef and cut into cubes. Strain the boiling water and return it to the pot, heating it over the stove.

    Heat 3 tablespoons of vegetable oil, sauté the spice paste until fragrant. Remove and add to the beef broth.

    Add the radish, green onions, celery, ginger, and lemongrass, cook until boiling and the flavors are absorbed into the beef. Taste and adjust seasoning. Add vinegar if desired, stir well, and remove from heat.
