A favorite Soto Bandung, a clear broth soup with beef, radish slices, and a sprinkle of fried soybeans. Easy to make. Delicious when enjoyed hot with a plate of rice. I've included tips below to prevent the radish from being bitter. I've added step-by-step photos after making it again, so friends who recreate it can see more clearly.
Cooking Instructions

Boil water in a pot, add the beef, and cook until tender. Remove the beef and cut into cubes. Strain the boiling water and return it to the pot, heating it over the stove.

Heat 3 tablespoons of vegetable oil, sauté the spice paste until fragrant. Remove and add to the beef broth.

Add the radish, green onions, celery, ginger, and lemongrass, cook until boiling and the flavors are absorbed into the beef. Taste and adjust seasoning. Add vinegar if desired, stir well, and remove from heat.

Take a bowl, pour in the beef soup, and sprinkle with fried soybeans and fried shallots.

Serve with white rice, chili sauce, and crackers. If desired, add medium-sweet soy sauce and a squeeze of key lime. If fried soybeans are unavailable, substitute with fried peanuts.

To prevent the radish from being bitter, after chopping, sprinkle with salt and gently squeeze, then rinse thoroughly. Boil water and cook the radish until the water boils once. Drain and discard the water.
