I made this as a surprise breakfast for someone who loves sweet potato a lot
Cooking Instructions

Peel the potatoes then cut into desired shapes

Next saok in salty water for about thirty minutes

Then heat vegetable oil in a sauce oan and fry
- 4
While frying, roughly bleed your pepper and tomatoes
- 5
Break the egg and whisk
- 6
Heat two cooking spoons of vegetable oil then add onion and saute
- 7
Next, add the blended tomatoes and continue to fry, add the stock cube then fry till dry

Add little salt to the egg and whisk again
- 9
Finally add the egg to the sauce then leave for few minutes, stir and bring down

Serve with the fried potatoes and garnish with Avacado slices

This is a sweet yet spicy tomato sauce that I like to add to my chilli. You could put it on anything you wanted too really but it's a really good fit when mixed into a chilli I think. If you don't want the sweetness to it simply substitute the 9 roma tomatoes with 4 beefsteak tomatoes and leave out the brown sugar entirely.
