Ingredients

  1. 500 gfresh mushroom, preferably of different varieties (button, oyster, portabello, shitake)
  2. 1 medium onion, finely chopped
  3. 2 garlic cloves, peeled and crushed
  4. 30 mlolive oil
  5. 100 mlred wine
  6. 1 tablespoonbalsamic vinegar
  7. 4 tablespoonsfresh cream, or double cream
  8. 1 teaspooncorn flour
  9. 1 teaspoonpaprika
  10. 2 tablespoonsfresh parsley, chopped, equivalent to a handful of parsley
  11. salt
  12. pepper

Cooking Instructions

    Wipe the mushrooms with a damp cloth and cut them into quarters

  2. 2

    Coat the mushrooms in the paprika, by shaking them in a sandwich bag or in a bowl covered with a plate

  3. 3

    Gently heat the oil in a large pan

  4. 4

    Stir fry the onion and garlic for 3 minutes, until starting to brown

  5. 5

    Turn up the heat and add the mushrooms in batches

  6. 6

    Cook each batch for a few minutes, with the pan covered to seal in the juices

  7. 7

    Remove each batch from the pan when the mushrooms are browned and softened

  8. 8

    When all the mushrooms are cooked, put them back in the pan

  9. 9

    Add the red wine and balsamic vinegar and simmer gently

  10. 10

    Mix the cornflour with a tablespoon of water in a cup, to form a paste. Add to the pan and mix well. The sauce should thicken.

    Add the cream and parsley and mix well

I live in London where there are loads of amazing restaurants, but I still feel best after having cooked a lovely meal at home! Favorite things to cook: I love mushrooms and I love cheese!So dishes with these 2 ingredient will be a feast for me!I am almost 100% vegetarian which you might notice from my recipees...Dishes I love are Lebanese vegetarians dishes based on pulses like mjaddarah and borghol, so keep these coming my dear Shahiya team!
