Fermented crab paste and bamboo shoot salad with crab paste are traditional dishes from Northern Thailand. I love eating sticky rice with bamboo shoot salad with crab paste. I usually keep fermented crab paste in the fridge to make chili paste and bamboo shoot salad. If I have 'forest bamboo shoots', which have a unique spicy, tangy, and slightly bitter taste, I enjoy it even more. These bamboo shoots are abundant during the rainy season, growing in the mountains. They are popular in Northern and Northeastern Thailand. They are often boiled and dipped in chili paste, cooked in curry with yanang leaves, or made into bamboo shoot salad and soup in the Isaan style. Typically, I buy pre-boiled ones and then boil them again. A key ingredient in Northern-style bamboo shoot salad is 'ginger leaves', which enhance the aroma of the salad. The fragrance of the crab paste and ginger leaves is delightful and lingers on your hands. It's truly delicious!

Homemade tomato pesto
I was making Pasta and Rice for lunch on Saturday and wanted to top it off with something other than sauce. Actually, I do have a delicious Lemon Sauce recipe but I didn’t have lemons on hand so I made Tomato Pesto with some tomatoes that I picked up a few days ago, which I absolutely love. Now, that I think of it I think my next post might just be the Lemon Sauce for Pasta. Not sure will have to check if I have all the ingredients. hehehheI don’t really like to add Basil into my recipes, because I find the taste and smell to be a bit intense. But I did add just a few pieces of Basil into this recipe. (Now if you enjoy the intense taste then go ahead and add as much as you want) Maybe this is one of the reasons I do not eat Garlic.My husband doesn’t like to eat Pesto, so this was a nice opportunity for me to make something I truly enjoy. I always add a few fresh tomatoes when making my Pesto, and beat it just a few minutes more so that they can combine with the sun dried tomatoes. You might just like this recipe…a bit different but still tastes gooddddd!!!

California Farm Sun Dried Tomato Paste
When you sun dry red ripe tomato puree for four days, you get superb tomato paste. If you dont get four continuous days of sun this time of year, dry in oven. No other ingredients added except a teaspoon of seasalt per pint, just dried into paste in the sun on a half size baking pan. Fresh frozen in small quantities, I use empty half eggshells, holding one ounce each, not boiled or canned to keep that summer fresh taste.


Turmeric Paste for tea/gold milk
This made ahead turmeric paste stimulates me to get more turmeric into my body because I don't think it's possible for me to make curry every day. Coconut paste is made simply by blending young coconut meat into a paste. Fresh young coconut doesn't contain as much fat as matured ones yet the fiber rich meat tends to be more sweeter and creamy. My stomach unfortunately cannot tolerate any store bought coconut products that is come from a jar, but you can definitely use 1/2 cup of coconut milk, nut milk or cow’s milk if you can tolerate.
