Lemon Chicken and Broccoli

Ingredients

4 servings
  1. 2 Tbspall-purpose flour
  2. 1/2 tspsalt, divided
  3. 1/4 tspblack pepper
  4. 1 lbboneless skinless chicken breast, thinly sliced
  5. 2 tspolive oil
  6. 1 1/2 cupfat-free chicken broth
  7. 2 clovesgarlic, minced
  8. 2 1/2 cupsbroccoli, uncooked, small florets
  9. 2 tsplemon zest
  10. 2 Tbspparsley, chopped
  11. 1 Tbsplemon juice

Cooking Instructions

  1. 1

    Combine: 1.5 Tbsp flour, 1/4 tsp salt and pepper. Coat chicken with mixture

  2. 2

    Heat oil in a skillet over medium-high heat. Add chicken and cook, turning as needed, until lightly browned and cooked through, about 5 minutes. Set aside

  3. 3

    Saute Garlic in skillet until fragrant.

    Add 1 cup broth to skillet, bring to boil (scrapping browned chicken pieces off pan) add broccoli. Cover and cook for 1 minute

    Mix remaining broth, flour and salt. Add to skillet and simmer over low heat

  6. 6

    Cover and cook until broccoli is almost at desired tenderness. Add chicken and lemon zest, heat through

    Toss with lemon juice and parsley

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more.
