Ingredients

8 servings
  1. 1big sized beet
  2. 1/2 cupyellow moong daal (soaked for 2 hours)
  3. 2 tbspchopped carrot
  4. 2 tbspchopped capsicum
  5. 2 tbspgrated coconut
  6. 1/3 cupboiled peanuts
  7. 1 tbsplime juice
  8. 1 tbspChopped coriander and mint leaves
  9. 1green chilli finely chopped
  10. 2 tbspmayonnaise
  11. to tasteSalt
  12. as neededChaat masala to sprinkle

Cooking Instructions

20 minutes
  1. 1

    Peel and wash the beet. Boil it as a whole in a pan with little salt and water till properly cooked. Keep it aside.

    Mix all the other ingredients except salt and chaat masala in a big bowl.

  3. 3

    Cut the beet into thin slices.

  4. 4

    Fill the prepared stuffing and fold the beet slice half way through.

  5. 5

    Repeat the same with all the slices.

  6. 6

    Sprinkle lime juice,salt and chaat masala over them and serve immediately.

  7. 7

    Quick beetroot bites are ready.
