Labneh is basically yogurt cream cheese with thick creamy slightly sour texture from which whey has been removed completely.Labneh is arab alternative to cream cheese.An arabic traditional breakfast/meal is incomplete without it.usually its available in superstores in packaging either tubs or cans.yet it can be prepeared at home as well for domestic use.

Cooking Instructions

Take yogurt or dahi & mix salt in it. Spread a muslin clith/cheese cloth/malmal ka kapra in a deep bowl. Pour over yogurt on cloth

Fold cloth from all sides & lift it up letting the water drain from it.either tie a knot or tie with rubberband. Hang it in this manner. Water from yogurt or whey(as it is called) collected in bowl slowly.keep it hanging & releasing water for few hours better 12-24 hours.you can keep it in fridge as well

After 12-24 hours.open the knot & wrap cloth over cheese nicely & kept a heavy object at cloth over strainer.let it be pressed like this for 12 hours or so in or out fridge.this helps in removing any extra whey from yogurt & also to maintain a shape

Open the wrap,take out labneh from cloth,place it on smooth surface.it can be mix it with herbs or seasonings and use as spread. Or cut into cubes or blocks & serve on cheese board or beat it with spices & drizzle upon with olive oil to use as a dip for starters.I sprinkled some pumpkin seeds over.enjoy a commercial product in comfort of home with cookpad

Please take a look at the referred recipes.You can reduce the condensed milk a little to taste. I specified 1 tablespoon of condensed milk for every 100g before draining of yogurt to make it easy to remember. Try making this with various flavored yogurts instead of plain yogurt to enjoy various flavors. If you use flavored yogurts, omit the condensed milk.
