The recipe came from my Niece because she made and send it to me. You can put curry powder instead of paprika, coriander powder and turmeric powder. This paste you can use right away, or refrigerate up to a week. Or freeze in an ice cube tray; transfer to a resealable bag and freeze up to 3 months

Ingredients

6-7 persons
  1. 8dried red chilies
  2. 1large onion sliced
  3. 3garlic cloves
  4. 2lemon or lime leaves
  5. 1 tsppaprika
  6. 1/2 tspground coriander
  7. 1/2 tspturmeric powder
  8. 2 stalkslemongrass
  9. 3 tbsalmond paste or cashew paste or powder
  10. 1 sprigcurry leaves
  11. 1 tspchopped galangal or young ginger
  12. 1 tbstamarind with pulp
  13. 2 tbsoil

Cooking Instructions

    Place chiles, onion, garlic and lime leaves in a pot. Cover with boiling water; let stand 15 minutes, until chiles soften. Drain.

    To a pan on medium-low, add paprika, coriander and turmeric. Cook, stirring, until fragrant, 1 to 2 minutes. Transfer to a small bowl or plate to cool.

    In a food processor, combine chile mixture, spice mixture, lemongrass, cashews, galangal or you g ginger and tamarind; process until finely chopped or mashed. Pour oil and put all the mixture with Curry leaf and fry it. Store it in jar.
