The recipe came from my Niece because she made and send it to me. You can put curry powder instead of paprika, coriander powder and turmeric powder. This paste you can use right away, or refrigerate up to a week. Or freeze in an ice cube tray; transfer to a resealable bag and freeze up to 3 months

Cooking Instructions

Place chiles, onion, garlic and lime leaves in a pot. Cover with boiling water; let stand 15 minutes, until chiles soften. Drain.

To a pan on medium-low, add paprika, coriander and turmeric. Cook, stirring, until fragrant, 1 to 2 minutes. Transfer to a small bowl or plate to cool.

In a food processor, combine chile mixture, spice mixture, lemongrass, cashews, galangal or you g ginger and tamarind; process until finely chopped or mashed. Pour oil and put all the mixture with Curry leaf and fry it. Store it in jar.

‘Ayam Bakar’ is an Indonesian or Malaysian dish of charcoal-grilled chicken. The chicken is usually marinated with the mixture of different kinds spices such as garlic, shallot, chili pepper, tamarind juice, galangal, turmeric, ginger, bay leaf, candle nuts, and sweet soy sauce. ‘Ayam Bakar’ is usually served with ‘sambal trasi’ (Indonesian chili sauce - I’ll share the recipe in my next post 😊) and slices of cucumbers, tomatoes, and lettuce.Every region in Indonesia has their own special kind of ‘Ayam Bakar’. The one I’m posting now is a Javanese Ayam Bakar. It uses a lot of sweet soy sauce.
