Very easy and incredibly tender/delicious. I added crab and octopus as well to the filling and it turned out great. As good as the stuffed squid I had at La Fragata restaurant in Bogota.

Very easy and incredibly tender/delicious. I added crab and octopus as well to the filling and it turned out great. As good as the stuffed squid I had at La Fragata restaurant in Bogota.
Cooking Instructions

Heat 2 tablespoons of oil. Cut tentacles into small pieces and saute in hot oil for 3 minutes. Remove tentacles with slotted spoon and let cool.

Add tomatoes, 1/2 teaspoon chipotle powder, sea salt and chopped oregano leaves to the oil, and simmer for 10 minutes.

While sauce simmers, stir together remaining ingredients (sauted tentacles, egg, bread crumbs, parsley, chipotle powder) in a bowl. Stuff the squid tubes with this mix and weave a toothpick across the opening to shut it. Heat two more tablespoons of oil and brown squid tubes all over for about 5 minutes or until squid isn't releasing liquid anymore.

Cover squid with sauce and simmer, covered for 30 minutes until squid is tender. Serve hot with sauce.

Usually, the squid used for stuffed squid is tough. I thought it would be so much better if the meat was tender, so I challenged myself to achieve this. I cooked it simply using Mrs. Adachi's (a recipe blogger and writer) teriyaki sauce, which was shown on TV the other day. It's a bit sweet, so if you don't like sweet sauces, you can omit the sugar for a savory sauce.Usually, rice stuffed squid is made with a small portion of mochi rice... but in this recipe, I just used already cooked rice to keep things simple. The squid is not simmered, but is finished quickly over high heat, which means the squid remains tender. If you simmer squid for a long time, it'll turn tough. If you mix the sauce into the rice that's stuffed in the squid, it'll become pretty sweet. If you prefer it less sweet, use plain rice for the stuffing instead. Recipe by Mekamahao cookpad.japan -
