bacon crust quiche

I love quiche but hate the idea of putting down a pastry and making an entire pies worth of it. This simple receipe makes it very easy to have egg muffins and is easy to transport and put together later for lunch as well.

Cooking Instructions
- 1
Preheat oven to 400°F
- 2
whisk eggs, milk, baking soda, and flour together in a wet measuring cup or similar container with a spout for easy pouring
- 3
line two or more small loaf pans with bacon, covering the sides and the bottom. best to slice each piece in half so they lay flat
- 4
Add cheese and any other desired vegetables such as onions and green peppers
- 5
Add the egg mixture to pans. leave at least 1 cm of room from the top to allow for expansion while baking
- 6
bake for 20 or more min. to test if it is done, insert clean butter knife in middle; it should come out clean aside from some steam
- 7
pull out of oven and allow to sit for at least two minutes. run a butter knife along the inside edge of pan to loosen anything that is sticking. allow to cool for another 5 min before putting pan on its side and easing quiche out
- 8
cut loaf into pieces and add to muffins or buns as desired

I wanted to serve something like this for brunch. I made mine easily with frozen puff pastry. It's easier if you bake the puff pastry on the day before making the quiche. I recommend using a chunk of cheese; preferably parmigiano reggiano or comte! It really makes it different from when you use store-bought grated cheese or easy melting cheese. Crustless Asparagus & Bacon Quiche (low carb, lower fat, high protein) Crustless Asparagus & Bacon Quiche (low carb, lower fat, high protein)
This is a low carb lower fat quiche, made so by skipping the crust and replacing heavy cream with a blend of low fat cottage cheese and 1% milk. The focus of this dish is the asparagus so I intentionally used a light tasting cheese, mozzarella, to maintain the typical texture of a quiche but not mask the asparagus flavor.I also use roasted asparagus because that's my family's favorite, but you can cook yours any way you like. The 'Best Before' date on the loaf of bread was close, so I decided to make some tasty quiches.Instead of bread, you can use frozen pie crust. Alternatively, you can pour the quiche filling into a ramekin (small oven-proof dish) without bread. It is nice! With or without bread crust, your choice! Recipe by Tomomaki0313 cookpad.japan -
