Mix plain flour and porcini powder. Add eggs until a breadcrumb consistency.

Place on the bench and mould into a solid dough. Once formed roll through the pasta machine.

Roll the pasta through until the pasta is smooth.

Cover and rest the pasta in the fridge for at least 30 minutes.

Sweat onions and garlic in olive oil for a few minutes. Add mushrooms and cook until soft. Season as required with salt and pepper.

Allow the mushroom mix to cool. Put into a food processor with the yolk and parmesan cheese. Mix until smooth and add truffle oil salt and pepper as required.

Roll pasta out to desired thickness. Cut square shaped portions. Pipe mushroom mixture into each square.

Paint each square with egg wash in a L shape.

Fold the pasta over and seal the edges down to form a triangle. Pinch the bottom of the pasta to form a hood. Fold the bottom over to seal.

Cook pasta in boiling salted water until it floats to the top.
