Ingredients

4 servings
  1. 2medium sized potatoes - peeled, par boiled and cooled
  2. 400 gsquid
  3. Clovegarlic
  4. Tincherry tomatoes
  5. Olive oil
  6. Few black pitted olives
  7. Fresh basil
  8. Glug of white wine
  9. Salt to tas

Cooking Instructions

    Start by preparing your potatoes, peel, chop into small chunks and par boil for about 6-7 mins. Leave to cool. When ready, cook garlic gently in olive oil for 1-2 mins. Slice up the squid and throw it in. After 1 min, add wine and let it evaporate. Then remove squid and leave on a plate. Drain the water from the pan

    Add a bit more oil to the pan. When hot enough, add the potatoes and crisp up for a couple of minutes. Then add the tomatoes, mix and simmer for 5 mins

    Now add the squid and season to taste. Cover and simmer on lowest flame for about 20 mins. Right at the end, throw in some sliced olives and fresh basil
