Ingredients

  1. 350 gchicken breast, cut into bite-sized pieces
  2. 1/2 cupmix bell pepper, cut to bite size
  3. 1/2 cuponion, chopped
  4. 1/2 cuppineapple, chopped
  5. 1carrot, cut to bite size
  6. 1/2 cupzucchini, cut to bite size
  7. Batter
  8. 1/2 cupall-purpose flour
  9. 2 tbspcornstarch
  10. 1 tspbaking powder
  11. 1/2 tspsalt
  12. 3/4 cupwater
  13. Sauce
  14. 1/3 cupketchup
  15. 1/3 cupvinegar (white or rice vinegar)
  16. 1/3 cupsugar
  17. 2 tbspsoy sauce
  18. Corn starch water (2 tbsp cornstarch mixed with 6-8 tbsp water)

Cooking Instructions

    Make the Batter: In a bowl, mix the flour, cornstarch, baking powder, and salt. Gradually add water, whisking until smooth.

    Coat the Chicken: Dip the chicken pieces into the batter, ensuring they’re fully coated.

  3. 3

    Fry the Chicken: Heat oil in a pan. Fry the coated chicken pieces in batches until golden brown and crispy, about 4-5 minutes. Drain on paper towels.

    Prepare the Sauce: In a small bowl, combine ketchup, vinegar, sugar, and soy sauce. Stir in the cornstarch mixture and mix well.

    Remove the rest of oil, add all the vegetables in and combine (high heat). Pour the sauce over, follow by the fried chicken balls, mix well and serve it with steamed rice or noodles.
