Ingredients

  1. For the sparking carrot ginger elixir:
  2. 2medium carrots / 4-5 small carrots, peeled and chopped
  3. 1 inchginger, peeled and chopped finely
  4. 1 tbsplime juice
  5. 1/4 tspcumin powder
  6. 1 tbsphoney / sugar to taste
  7. 1 cupcold water
  8. 300 mlSprite to top up
  9. 3-4Ice cubes (optional)
  10. 1fresh Tulsi (Indian holy basil leaves) for garnish
  11. For Red onion & Tomato kachumber salad:
  12. 1medium red onion, or 4 small red onions- thinly sliced
  13. 1large or small tomato diced
  14. 1/2cucumber diced
  15. 1 tbspfresh coriander leaves chopped
  16. 1 tbsplemon juice
  17. 1/2 tspcumin powder
  18. 1/4 tspblack salt (or regular salt)
  19. 1 pinchred chili powder
  20. 1fresh Tulsi (Indian holy basil leaves) for garnish

Cooking Instructions

    Prepare the sparking carrot ginger elixir: in a blender combine carrots, ginger, lime juice, cumin powder and honey / sugar with cold water. Blend until smooth.strain for a smoother texture.pour into the glass over ice (if using), then top with sprite, stir gently. Garnish with a Tulsi leaves for a fragrant sacred finish.

    Make the kachumber salad : in a bowl, mix red onion, tomato, cucumber and coriander. Season with lemon juice, cumin powder, black salt / regular salt and chili powder. Toss well and let it sit for a few minutes.

    Serve & Garnish: finally garnish the salad with Tulsi and serve with Golden Sparking Elixir.
