Mock Peking Duck

I call this ‘Chinese Souvlaki’. The pancakes for this dish are super easy to make. At least much easier than making Greek flat bread. The whole duck is not easily accessible for many people. Why don’t you use chicken? Roast a whole chicken in the ‘Peking Duck’ flavour OR my ‘Teriyaki Chicken’ can be a good substitute. Just add ‘Chinese Five Spices’ to it, it would be perfectly Chinese. This is a fun, enjoyable and inexpensive dish to entertain your family and friends.

Cooking Instructions

Prepare Chicken. Roasting is the easiest method because you can do all other preparation while the chicken is roasting in the oven. *See my ‘Peking-inspired Roast Chicken’

Make 'Savoury Pancakes'. *See my "Savoury Pancakes'

Mix all the 'Sweet Miso Sauce' ingredients in a heat-proof bowl, then cook, stirring occasionally, for 2-3 minutes in microwave. You can do this using a saucepan. Alternatively, the ready-made ‘Hoisin Sauce’ is a good sauce for this dish.

Slice all vegetables into thin/fine strips.

When you eat, spread a teaspoonful of ‘Sweet Miso Sauce’ on a pancake, place chicken pieces and vegetables, wrap and enjoy!

I always rely on chicken breast before payday. This is a Chinese flavored version of "Sautéed Chicken That's Still Tender and Mild". Another thing I want to do at the end of the month is to get rid of all the aromatic vegetables I have stored. I also wanted to use up some Chinese flavoring ingredients...so this recipe was born.I used a chicken breast that weighed 230g after the skin and extra fat were removed. After Step 3, it goes quickly, so if you have the time, pre-season the chicken in advance. If you will be using this in a bento and you'll be marinating it overnight and cooking it in the morning, use a little less salt and a little more sake. If leftover chicken stored in the refrigerator stiffens up, once you heat it up in the microwave, the tender texture will return. It's also delicious with some dry-roasted pine nuts scattered on top.
