Cooking Instructions

Sift the flour in a large bowl. Add water and yeast to the centre of the bowl, add a little bit of flour to the water. Whisk it well. Cover the bowl with a kitchen towel and leave it in a warm place for 30 minutes until yeast to activate.
Now add sugar, salt and oil to the flour and mix all ingredients together well and knead it for 10 minutes until have a smooth dough. - 2
Drop oil in the bowl, place the dough inside the bowl. Cover it with a wet kitchen towel and leave it in a warm place for 2 hours. Now, Preheat the oven to 180c degree.

After 2 hours, the dough is double in size and now knead the dough again and then divide it into small pieces (each one 55g).
Take a ball and roll it with your hand, and give a cigarette shape.. Make sure that sides are thicker, so just roll out the middle. - 4
For making a bird shape bread,tie the dough into a knot (as you see in the photos).Make one end of the dough a tale by pressing the fork or by a scissor (as you see in the photos).

Make other end a head and a beak.

For bird’s eye using a tooth piece and pierce the dough, leave it as it is, or fill the eye with raisins or sesame seeds.

Place a bowl with boiled water into the oven to keep bread moist.Then bake the breads for 20-25 minutes..
Once they are ready, remove them from the oven and brush with olive oil or other vegetable oil and serve it. - 11

This is a recipe from King Arthur Flour. It comes with the sourdough starter that can be ordered from them as well as finding it online in their website. It is a very good base recipe for making sourdough breads.Maintaining a proper sourdough starter is definitely a commitment. If you keep starter out at room temperature you will have to feed it every day. If you keep it refrigerated like I do, you will only have to feed it once a week to maintain it however you have to remove from fridge and feed it at least 8 to 12 hours before you want to make bread with it. And with both ways; always feed after use.Making a starter from scratch takes a lot of time before you can use for first time. I suggest getting a few ounces of a established starter from someone who has one already or order it from King Arthur Flour.Sourdoughs have different flavors depending on where you live. Monday was our Clean Monday or Ash Monday, and is the day we usually bake the Greek Bread “Lagana”. I am sure you have seen other photos of Lagana from other Food Bloggers that look gorgeous 🙂 (Great Work fellow bloggers!!) mine doesn’t look like much, I know, but it does taste very good. 🙂Now, you might be wondering why my bread isn’t oval shaped, well like I have mentioned before my kitchen is quite small and I have very limited counter space. 🙂 (I don’t mind though I do my best with what I have). 🙂 So, I used a baking pan that I have and just used my fingers to push it out into a oval shape.This bread is so thin that you can actually use it to dip into the delicious dips you enjoy eating, or you can spread your dip onto the Lagana. 🙂 or even make delicious thin sandwiches….:) Foodzesty -

#breadsThis crispy on the outside and soft and chewy from inside Focaccia bread is one of the easiest breads you can easily bake at home. This dimpled Italian bread is so flavourful that you can't have enough of it. I love to eat it with piping hot tomato soup and it tastes great as a snack with a cup of coffee as well. My husband calls it a pizza without cheese...haha !! With the freedom to choose whatever toppings you like makes it more versatile. Loaded with herbs, olive oil and fresh veggies makes it a great choice for breakfast, dinner or any meal.I have made Focaccia with so many toppings but cherry tomatoes are my all time favorite. Firstly they give a nice colour and look to the bread, somehow making it more tempting and secondly I love how it tastes after baking. I know Focaccia calls for a generous amount of olive oil added to the dough and the topping as well, but the end results are awesome. Olive oil infused with garlic and herbs takes the bread to an another level. Although I have used dried herbs in my recipe but you can use fresh herbs depending on the availability.
