Heat ghee in a heavy bottom deep pan on medium heat.

Fry all dry fruits and bay leaf till pink colour then take out in bowl ; keep aside.

Now add sugar and caramelized on high flame till it attains light brown colour. Stir sugar continuously for prevent from burning.

Drain excess water of rice and add it to caramelized sugar so that rice will coated with caramelized sugar.

By the time heat milk in another pot on another switch off the gas stove. Reduce heat of rice pot on low flame. Now add little - little amount of milk in rice pot and stir.

Do this process (adding milk in rice pot) very carefully because when we add milk it boom very fast so, keep your face and hand away from pot.

Cook rice in milk for 10 minutes on low heat. Take milk powder and dissolve in lukewarm water ; now add it to pot. Cook rice for another 30 minutes or till rice is over cooked and milk turned thicken.

At this point add condensed milk and cook for another 10 minutes.

Add green cardamom powder, fried dry fruits and 2 pinches of salt then stir very well. Take it off from gas station. Cool down naturally.

Creamy, yummy and unique kheer is ready to serve. Usually kheeri is serve hot but you can have it cold as your preference.
