Ingredients

  • I cup rice
  • 2-1/2 cupwater
  • 3/4 red bhaji (red spinach)leaves, cleaned and chopped
  • 3/4tomatoes finely chopped
  • 3Garlic cloves, peeled and crushed or sliced
  • 3Green Chillies, chopped
  • 3dried red chilies chopped
  • 1 tablespoonCooking oil
  • to tasteSalt,
  • 2bay leaves
  • 1/2 cupbeetroot juice
  • 1/4 cuppomegranate and green peas for garnish (optional)

Steps

    Wash the rice and soaked for 30 minutes than Bring water to a boil in a medium saucepan. Stir in white rice and salt. Return to a boil over medium-high heat. Reduce heat, and simmer, covered, until rice is tender and has absorbed all the water, 15 to 17 minutes The rice will be studded with steam holes when ready.

    2. To begin making the red spinach Bhaji Recipe first wash and thoroughly clean the leaves thoroughly. After cleaning and washing the red spinach drain them in a colander for few minutes and pat dry between kitchen towels to remove excess water.

    3. Place a wok or kadhai on the heat and warm some oil in it.
    Add the garlic red chilies and green chillies and saute again for 1-2 minutes

    5. Add the chopped red spinach leaves Toss well, season with salt keeping in mind that reduce in volume once cooked, so add salt accordingly.

    6. Than add chopped tomatoes Mix well and cook covered for another 10 -15 minutes till the greens are just cooked, and not overcooked.

    7. Take another pan add some oil bay leaves add beet root juice than red spinach bhaji than add cooked steam rice red chilli powder,salt,mix well sauté it for 3 to 5 minutes

    8. Garnish with beetroot slices and pomegranate and green peas (optional) ready to served hot.
