Laapsi is a traditional sweet dish of Rajasthan and Gujarat. It is made from broken wheat, jaggery, clarified butter and nuts. Laapsi is always cooked on special occassions or rituals.
Broken wheat is a good sauce of iron, protein, fiber and jaggery is also a good sauce of iron. There are various ways of making laapsi but today I am sharing my way of making this delicious sweet dish.

Laapsi is a traditional sweet dish of Rajasthan and Gujarat. It is made from broken wheat, jaggery, clarified butter and nuts. Laapsi is always cooked on special occassions or rituals.
Broken wheat is a good sauce of iron, protein, fiber and jaggery is also a good sauce of iron. There are various ways of making laapsi but today I am sharing my way of making this delicious sweet dish.

Heat pressure cooker on medium flame. Add roasted cracked wheat, jaggery, salt and water. Close the lid and pressure cook the cracked wheat for 3-4 whistles. Switchoff the flame and let it cool down.

Heat clarified butter in a pan or wok on low medium flame.

Add clove, cinnamon and chopped nuts and roast till golden brown.

Now add in the cooked broken wheat, keep stirring on low flame till it starts leaving ghee on sides of the pan.

Lastly add cardamom powder. Mix well.

Garnish with nuts and serve.
