Ingredients

Serves 2-3 servings
  1. 2-4 bundlesbrown rice noodles
  2. Chicken breast
  3. 14 oz (400 grams)eggplant
  4. 3 1/2 tablespoons (50 grams)green curry paste
  5. 1 cup (250 ml)whole milk
  6. 4chili peppers
  7. 3-4 sprigsfresh basil
  8. 2 teaspoonscoconut sugar

Cooking Instructions

    Gather your equipment.

    Boil water. Once boiling, add the brown rice noodles and cook for 6 minutes. Rinse with cold water, drain, and set aside.

    Simmer the milk with the green curry paste. Once it comes to a boil, add the chicken.

    When boiling, add the eggplant and chili peppers. Cook until the eggplant is tender, season to taste, then add the basil.
