Boil the pork hock briefly with a little wine to remove impurities and odor. Rinse thoroughly with water.

Prepare the ingredients as shown in the picture. Heat a pan with cooking oil, then sauté the green onions, ginger, and garlic until fragrant. Add the chili peppers, star anise, and peppercorns, and continue to sauté until aromatic. Transfer to a separate plate.

Add a little cooking oil to the pan, then add the rock sugar and cook until it turns caramel-colored. Add the pork hock and stir until evenly coated.

Next, add soy sauce and oyster sauce, stirring until the color is even. Add hot water to cover the pork hock. Once it boils, cover with a lid and simmer on low heat.

Simmer until the liquid is almost reduced. Taste and adjust seasoning if needed. Remember to leave some sauce for dipping while eating, it's delicious 😛
