1 tablespoonoil
2 cupsmixed vegetables
2eggs, beaten
1sunny-side up
1 stalkscallion, chopped
2 cupscooked rice, preferably day-old

Blanch vegetable mix

Mix rice with beaten eggs and oil

Cook spam meat until browned

Add rice mixture and vegetable mix, stir and sit

Garnish with chopped scallion and sunny-side up
