Ingredients

  • 1 3/4 lbspork for shredding (800 grams)
  • 1/2onion, chopped
  • 3tomatoes, chopped
  • Chopped green chiles, to taste
  • 4eggs
  • 1 tablespoonvegetable oil
  • Salt, to taste
  • 1 pinchblack pepper
  • Ground cumin, to taste

Steps

  1. 1

    Cook the pork with half an onion, three cloves of garlic, salt, and about three bay leaves. You can also use beef for a delicious variation.

  2. 2

    Once the meat is fully cooked and tender, shred it. In a hot skillet with the oil, fry the shredded meat for a few minutes. Add the chopped onion and green chiles, and cook until the onion softens. Add the chopped tomatoes, black pepper, and ground cumin.

  3. 3

    When the tomatoes have softened, add the eggs and a little salt. Stir well and cook until the eggs are done to your liking. This dish is great for breakfast, making burritos, or as a sandwich filling.
