Ingredients

40 minutes.
6 servings.
  • 1 kgmutton
  • 4+2 onions
  • 2 tablespoonginger garlic paste
  • 1.5 tablespoonred chilli powder
  • 1 tablespoongaram masala powder
  • 3 tablespooncoriander powder
  • 1/2 cupcurd
  • 2bay leaves
  • To tasteSalt
  • For rice:
  • 1 kgbasmati rice
  • 3/4 cupghee
  • 10peppercorns
  • 2black cardemoms
  • 4green cardemoms
  • 4cloves
  • 2" piece cinnamon stick
  • 1star anis
  • 1 teaspoonblack cumin seeds
  • 4bay leaves
  • 1 pinchorange food colour
  • 1 tablespoonkewra water
  • 1 tablespoonsalt

Steps

40 minutes.
  1. 1

    Wash and soak basmati rice for 30 minutes.Drain and keep aside.

  2. 2

    In a pressure cooker heat oil,fry thinly sliced onions till golden.Add mutton and cook on high flame till water dries.

  3. 3

    Add ginger garlic paste,coriander powder,turmeric powder,red chilli powder and salt.

  4. 4

    Add 1/2 cup water,stir well and cook for 3-4 minutes on high flame.When oil leaves the edges of vessel,add 1.5 cups water and cover the lid.

  5. 5

    Pressure cook on high till 2-3 whistles.Cook on medium flame for 3-4 minutes.Let pressure release.

  6. 6

    Add garam masala powder and curd,stir and dry water of mutton if any.Keep aside.

  7. 7

    For rice,heat ghee in a heavy bottomed vessel.Fry 2 thinly sliced onions till golden brown.Take out and spread on paper towel.This will be used in garnishing.

  8. 8

    Add whole spices in remaining ghee,add basmati rice and salt.Mix and add 2 litres of hot water.Adjust salt.

  9. 9

    Cover the vessel and cook on high flame till water boils.Add half fried onion.Lower the flame to medium.

  10. 10

    Cover and cook the rice to 70%done.Stir in between.Don't over stir the rice to prevent breaking of grains.Try to stir with the thinner pot of skimmer(kafgeer).

  11. 11

    Now make a well in between the rice,add mutton and cover from rice.Cover the lid and further cook on low flame for 4-5 minutes.

    Check the rice,(add a dash of water if needed.)

    Take water,add kewra water and orange colour to it and pour over biryani.Cover and leave for 5 minutes.

    Mutton Biryani is ready to be served.Enjoy!!!!.
